MX or Mail Exchange records are DNS records that are necessary for the Email delivering. They specify the mail server, responsible for accepting e-mail messages.
The MX records are controlled at the DNS hosting company where your nameservers are pointed. If you decide to change your Email hosting company you must reconfigure the MX records to keep receiving emails to your domain.
The MX-record contains the host name of the computer(s) that handle the emails for a domain and a prioritization code. Emails are routed through to the IP address which is set in the A-record of the host.
